It’s great to get some veggies into a BBQ, but the last thing I want with a burger is the traditional BBQ fare of a heavy pasta or potato salad, neither do I want to just empty a token bag of salad into a bowl, that no one eats. BBQ salads can be really easy as well as complimenting, and even over shadowing the food on the BBQ, here are some ideas to get your mouth watering.

Courgette Ribbons, feta and pea
Deliciously light with proper English garden vegetables, peas and radishes take me back to childhood, courgette ribbons look great and feta adds some zing. Just use a vegetable peeler to turn a courgette into ribbons.
Avocado Caesar Salad
Apart from being incredibly popular right now, avocado also goes well with lots of things you might BBQ, slip some in a burger or add meat to the salad for a bread free meal. This is a really easy one to throw together, a pile or bag of salad leaves, sprinkled with avocado, shaved parmesan, croutons, which can be bought bagged too.
Green Bean Salad
I often make a Jaime Oliver green bean salad, steaming the beans and mixing while still warm with some vinaigrette, salt, pepper and chopped shallots. I love the tomatoes and parmesan added here for more colour.
A salad that just gets better in the sunshine as the tomatoes warm up and release more flavour. Try mixing different sizes and colours of tomatoes, you can add feta, cucumber and red onion too, but I really love the idea of a simple tomato salad.
Watermelon and feta and tomato
Watermelon is such a fun addition to a BBQ. Use a melon baller to make balls for this salad, mixed with cherry tomato and crumbled feta and then slice the rest up for pudding or use it to make Watermelon Daiquiris by freezing the watermelon and whizzing up with white rum, icing sugar and lime. Amazing!
Crumble some goats cheese over salad leaves and tomatoes. Have the salad waiting and add the asparagus straight from the BBQ.
