Giant pizza style cookies

Giant pizza style cookies are great to bake together, and even make an easy alternative birthday cake, served warm if you like, with ice cream, candles and sweetie toppings. If you like making pizza with kids, well this is a sweet version, it would also make a fab birthday party activity.

We came up with all this when we were snuggled up in the caravan this weekend, rain lashing against the windows, drinking hot chocolate, eating shop bought cookies and discussing what we would put in a cookie instead of chocolate chips.

We found the most melt in the mouth, crunchy but gooey recipe we could…

Ingredients

110g dark brown sugar; 4 tbs caster sugar; 110g butter, softened; 1 tea spoon vanilla extract, 1 egg; 150g plain flour; 1/2 tsp bicarbonate of soda; 175g of chocolate chips, or in our case, our favourites: 1 Crunchie, one Dime bar, one packet of Smarties, some Maltesters and a Kit Kat.

Equipment 

12 inch Pizza tray or baking tray, bowl, wooden spoon or food mixer. A pizza slicer and a cake lifter like are handy but not essential. (Links are to Wayfair.co.uk kitchenware)

Method

1, Heat the oven to Gas 4/180 C

2, Cream together the dark brown soft sugar, caster sugar and butter until smooth.

3, Mix in egg and vanilla.

4, Combine flour and bicarb and add to the mixture

5, Take the dough out, it should be stiff, either spread it with a knife across an ungreased pizza pan or baking tray. Ours are a bit rubbish so we used greaseproof.

6, Stick all your adornments on and bake for 15 mins or until golden brown.

Then we sliced it up, remembering which member of the family liked which chocolate.

Perfect with a glass of milk! The babushka glasses were a gift, but Wayfair.co.uk have Hello Kitty tumblers, Winnie the Pooh tumblers and I love these crazy colour tumblers which stack – perfect for the family kitchen.

Every home should have a cookie jar too, or a biscuit tin, even if it is only stocked on special occasions. Which one are you going to raid? I love cookies, but I will always be a biscuit tinner at heart. You?
